Ingredients:
3 slices white bread
3/4 cup whipping cream
1 tsp chopped scallions & extra to garnish
500 gm ground chicken
3 tsp lemon juice
2 green chilly (finely chopped)
2 tsp chopped fresh mint
3/4 tsp Ginger paste
Fresh breadcrumbs
Salt & Pepper
1 tsp Cashew Nuts
Carrot to garnish
Vegetable oil
Method:
Tear the bread into small pieces and put in a large bowl.
Add the cream and leave until softened.
Then add chopped scallions, chicken, lemon juice, mint, ginger paste, chopped green chilly, finely chopped cashew nuts and mix together.
Season with salt & pepper.
With damp hands, form the meat mixture into balls.
Coat the chicken balls with breadcrumbs.
Then heat the oil, add the chicken balls and fry for about 5 no mins, browning all sides until thoroughly cooked.
Serve garnished with the scallions & carrot.
